We all know the drill when it comes to our cravings especially the sweet ones that you can’t really always control whether you like it or don’t. If you are like me then you definitely know pretty well what I am talking about..
It is a hot summer afternoon and you have just come home from the beach and the heat is unbearable and just as you sit on the couch; just so you can get yourself together to go and get a shower; you start thinking about that frozen berry yogurt you usually get on the way home from work when you are craving something refreshing and sweet. And it hits you, you want berries, you want yogurt, you want something sweeeeeet. Oh God but no, you can’t, because you have been working hard enough to get that summer body ready and its the middle of the summer. Oh, and you had that huge slice of birthday cake last night as well when you were at that birthday party. God This is a nightmare i knooow. We have all been there, and felt this way before. You are not alone!!
The feeling of craving something sweet is too overwhelming sometimes and it can be really hard to control so most of us do tend to give in to our cravings and sometimes over do it on quite a regular basis. Just so I can explain to you how psychological this is, right? My own mother, every single day after she has had her lunch craves something really sweet; her excuse? Her blood sugar is low!! Funny right? How can your blood sugar be low every day right at the same time as soon as you have had lunch? It isn’t possible since we have checked her insulin and blood sugar levels and everything seems to be working just fine. Truth to be told, she just loves her chocolate and cakes too much to ever slightly consider not having some for a day or two.
Anyways, enough of the jibber jabber, I know you probably don’t care, all I am saying is that cravings are the worst nightmare ever. But of course, I have some good news for you, as always my dears. I have whipped up the freshest most comforting and tasty yogurt berry oat tart; please take the time to appreciate this…
All natural sugars, Gluten free and low in fat!!!!!!
Ladies and Gents I present to you this eye candy of a tart 😍

It took me quite some time to perfect this but now its time to share this with you. I just have to. It’s your favorite frozen berry yogurt combined with the crunch of an oat biscuit all wrapped up in a form of a tart with less the calories, less the fat and NO ADDED sugars. Do you hear heaven bells ring? Because I definitely do.

Recipe
Ingredients:
Crust:
• 100g pumpkin seeds
• 180g ground oats (oat flour)
• 120g low fat spread
• 10g stevia
• 20g agave nectar
• 1 teaspoon vanilla essence
Filling:
• 250g berries of choice (I used mixed berries)
• 500g low fat Greek yogurt
• 130g coconut cream
• 150ml coconut milk
• 20g stevia
• 6 gelatin leaves
Directions
For the crust:
Step 1 – In a food processor add the sunflower seeds and blend until they have been crushed finely. Add the oat flour and blend for a few seconds until well combined and mixed. Place your dry mixture in a bowl and set aside.
Step 2 – In a bowl add the 120g light spread and melt on bain-marie or microwave if you find it more convenient; Add the stevia, agave and the vanilla essence and stir until stevia and agave are dissolved.
Step 3 – Take the bowl with the dry mixture and add the liquid and mix until a dough consistency mixture is formed. (If you are feeling lazy, add everything in a food processor and blend until you have the dough like mixture)
Step 4 – Take a silicone tart form and place your dough and with your fingertips spread the dough evenly on the base and sides of your tart form. Bake at a pre-heated oven 180 degrees Celsius FAN for 30 minutes or until golden brown and the base has hardened up.
**BE CAUTIOUS, DO NOT REMOVE THE TART BASE FROM THE TART FORM UNTIL COLD AND UNTIL YOU HAVE HAD IT IN THE FREEZER FOR ABOUT AN HOUR. In this way you reduce the risk of having a broken tart base before even adding the filling.
For the tart filling:
Step1 – In a mixing bowl add the yogurt, coconut cream and coconut milk and either whisk by hand or with a hand mixer until a smooth thick like mixture is formed.
Step 2 – In a separate bowl weigh your berries and add them in a food processor or blender and blend until a smooth thick liquid is formed. Add the stevia and stir; Set aside
Step 3 – In a separate bowl add cold water and soak in your 6 sheets of gelatin and set aside.
Step 4 – Take the berries and add them in your yogurt mixture and whisk until the two mixtures have been incorporated. Set your mixture aside.
Step 5 – Take the bowl with the water and the gelatin and as you will be able to see, the hard gelatin leaves are now jelly like. Remove them of the water and place them I a separate small bowl and add 2 tbsp of the water that the gelatin has been soaking in and put it in the microwave and let it dissolve for 10 seconds approximately.
Step 6 – Once the gelatin has dissolved add in your berry yogurt mixture and wish well to make sure the gelatin liquid has been incorporated throughout your mixture evenly.
Once everything is ready it’s time to put our tart pieces together.
Take out of the freezer your tart base and now you can remove it off the form and place it on your serving tray as once the tart has been put together you won’t want to move it from one serving tray to another as it is most likely that it will break (unless you have left it to fully freeze).
Now take your tart filling and pour it in your tart base until it fills 4/5 of your tart and make sure your filling doesn’t overflow (honestly it is not a good look, it looks like a mess if it does.) Now take some berries and some mint leaves and decorate your tart as you like; have fun with it and make it your own little piece of artwork 😍
Let it sit in the fridge overnight before serving, to make sure the gelatin molecules have hardened up and will hold your tart together when you cut through it the next day.
